System Crashes with Only One Screen On

Hi all! I just heard about this forum over here so I apologize in advance for going about something wrong.

I have had a long standing issue but it sounds like this may finally be the right place to find the answer. I built my own desktop in August 2014. Here are my relevant specs:
  • Intel Core i5-4690
  • MSI H97 PC MATE
  • XFX Radeon R9 280X 3GB
  • EVGA 500W PSU
  • Windows 10 64-bit (originally installed Windows 7 Home Edition from a Dell laptop recovery disc I had on hand, activated with a Windows 7 Home Edition key I bought later, and is now upgraded to Windows 10)
I have a triple monitor setup as well as a TV (no more than 3 on at once due to the limitations of the card). These have dimensions (from left to right) 1440x900, 1600x900, 1440x900, and 1920x1080 (TV). I am running the latest AMD graphics drivers (Radeon Software Version 16.7.2; Driver Packaging Version 16.20.1035.1001-160708a-304447E).

Problem: The system runs flawlessly with more than one screen on, but crashes if only one screen is enabled in software or physically plugged in. It's not a BSOD though, but rather a strange striped screen with a seemingly new color each time (sometimes it's grey, sometimes it's blue, sometimes blackish-redish, etc.). Example below.

However, the system is completely unresponsive when this happens (the Num lock light doesn't even change). It also usually doesn't happen immediately, but rather within a few minutes of switching to one screen. Sometimes the screen will shift upwards maybe 100 pixels for a frame a couple times before a crash. After having to hard reboot, I must quickly switch another screen back on before the system crashes again soon after booting with one screen. This leads me to believe it is likely a graphics driver problem, but upgrading/downgrading the driver to any version doesn't seem to help. I also haven't been able to find anything in Event Viewer, and, due to the nature of the crash, there is no error code displayed.

Fortunately, this isn't a problem most of the time due to my setup, but it becomes an annoyance when I'm using my TV (I don't want the others on at that time) and downright frustrating when I want to take my PC anywhere as I need to bring at least 2 screens.

Please share any advice you have and thanks in advance.

I haven't really encountered anything specific like this before, but you are correct, it would lead me to believe it's a graphics driver problem.
Did this problem occur when you used Windows 7 before upgrading to 10?

Yes, this happened on Windows 7. I don't remember exactly when it started, but it was soon after building the computer.
