Update - issue appears to be related to installed RAM for a new system build:
Windows Memory Diagnostics/Memtest86 detected a hardware problem.

Steps taken:
- Ran Windows Memory Diagnostic - this identified hardware failures.
- Ran Memtest86 - test failed.
- Removed second RAM stick and reran Memtest86 - test now passes, and Cyberpunk2077 seems to be stable.

I'll retest the suspect RAM stick to try and confirm the problem.
