USB 3.1 Real life speeds

I'm, just curious to how fast USB 3.1 USB C actually is. The max I have been able to find is 790 MB/s. This is good enough for a standard SSD. However, with PCIe 4.0 coming out and with PCIe 5.0 already being worked on. It seems USB technology is lagging behind very quickly.
 
Having just moved 30GB worth of files in less than a minute to an external SSD across USB 3.1, I don't really see the need to make things faster for USB devices. External SSDs aren't meant to run an OS. It has always been inadvisable to run a true OS through USB since the connection isn't 100% stable. I run virtual machines off USB drives all the time, but I wouldn't want to run my primary system that way and risk losing important data due to corruption.
