Just to finalise this thread, I wanted to let you know that I ended up ordering a pre-built system from Centrecom online in Australia.
The one I settled on was this one:

Comes with an NVMe M.2 SSD as the system drive which is great as the three SSD's I have in my existing system aren't as fast, so I'll be definitely leaving it as the system drive.
I'll be pulling my existing ones and slaving them into the new system as secondary drives which will save a lot of time transferring data across.
So with the drives it comes with, slaving my existing 3 SSD drives, as well as attaching both of my USB 3.0 4TB external drives, I'll have a total of 14TB of storage space. Should do me for another year or two I think
I also intend to pull and toss my existing low-end GPU into it for now until GPU prices come down (their costs are beyond ridiculous atm IMO) and will eventually up the RAM to 64GB when RAM prices come down as well.
It lacks a DVD-RW but it's been so long since I've used the one in my existing system I doubt I'll bother pulling that and transferring it across. Don't really see the point.
All in all, I'm hoping it should provide considerably better performance than what I'm used to and the bonus is that, unlike my existing system, it's fully Windows 11 compatible.
The only real letdown and dissapointment is the PSU, so I also ordered a 750W Corsair PSU from Amazon to install into it instead, along with new batteries for my existing UPS at the same time as the current ones are almost at end of life.
I placed the order on Sunday night and just got an SMS advising it will be delivered by courier today. Pretty good service in that respect.
Thought the price wasn't too bad for what I'm getting too.
What do you think of the price and system itself?
