Hello, I currently have an asus rog strix b250f gaming. I am interested in the Fatal1ty Z270 Professional Gaming i7 motherboard. My question is whether I should change boards. Thank you very much in advance. Best regards.

Do you need to? No. Now whether you want to or not is totally up to you.
But it is important to note there are many other variables involved that affect computer performance besides the motherboard itself. In fact, in many cases, the motherboard plays a minor role, behind the CPU, graphics solution, RAM and drives.
Note too that while it appears both of those boards support the same CPUs and RAM, you will need to verify that through their respective QVLs (qualified vendors list) or else you may need to buy a new and compatible CPU and new RAM too.
Also, remember that, in terms of Windows licensing, a new motherboard constitutes a new computer. And a new computer typically needs a new Windows license. If your current Windows license is an OEM license, it is not legally transferable to a new computer. So you would need to budget for that.
Perhaps if you list your full system specs, we can help you decide where best to put your upgrade money, if you need to at all.

My pc has an i7-7700, a gt730, 20gb ram drr4 2133mhz and a 500w 80 plus power supply.

Sounds like already got a good plan there. That is already a nice processor and 20GB of RAM is a HUGE chunk. And for the record, EVGA are my go-to power supplies lately! :) The only other thing I might suggest, if you don't already use them is SSDs.
